This is blue crab at its best. The spicy and sour flavours of the well-seasoned Som Tam or green papaya served as a shredded salad (popularised in the Isan province) brings out the fresh taste of Hua Hin's signature blue crab in this dish. The appetizer dish is a green papaya salad containing chunks of raw very fresh blue crab.

This is a dish that tastes much better in Hua Hin due to the size and freshness of the areas oysters. Au San meaning oyster pancake is prepared in a wok where very juicy oysters are stir fried with egg and tapioca starch. This dish is generally served on a hot plate and is one to awaken your senses.
Delicious Babylon snails are the main ingredient here. Pad Cha cuisine is known to be quite spicy so try it with precaution, but do give it a go for the delicious flavours. The snails which are a delicacy in Hua Hin are cooked in a wok with sweet basil, garlic, wild ginger, birds eye chili and the very flavoursome roasted sweet chili oil.
A lovely colourful dish served in a coconut shell Haw Mok Talay although traditionally made out of river fish is made with sea bass in Hua Hin. A variety of seafood such as mussels, shrimp and squid are combined with the fish, coconut cream and red chili to make the delicious dish.
This is deep fried crispy fish. A very good accompaniment to drinks or steamed rice Plaa Soi Tod Kratiem is deep fried Sand Whiting – little silvery salt water fish – with garlic. Enjoy the golden crispy bites but make sure to avoid the middle bone.
