Fresh Summer Recipes

I'm always on the lookout for easy, healthy summer recipes that make use of all the wonderful fresh foods available at this time of year.

Watermelon Salsa

From EatingWell: August/September 2005 Sweet, savory and crunchy salsa accompanies grilled pork or chicken rather nicely. Try it with tortilla chips as a refreshing alternative to a tomato salsa.

Avocado, Tomato & Chicken Sandwich

Smooth, creamy avocado combines with the cool crunch of tomato, chicken breast, and a delicious crusty bread. In this healthy chicken sandwich recipe, the avocado is mashed to create a healthy creamy spread.

Anchovy & Cherry Tomato Salad

From EatingWell: May/June 2013 This anchovy and tomato salad recipe has very few ingredients but absolutely sings with flavor when it's made with cherry tomatoes picked at their ripest. For the prettiest salad, use a combination of orange, yellow and red tomatoes.

Eat Yourself Skinny " Raspberry Honey Parfait

Nothing says "summer" to me like a fresh, ripe raspberry fresh off the vine. And this raspberry honey parfait is a great way to enjoy fresh raspberries, with just a bit of embellishment. Enjoy!

Barbells and Bellinis: Grilled Chicken with Blueberry Guacamole

If you are anything like me (which let's just hope for your sake, you're not), you might have slightly over indulged yesterday. Too much good (read: unhealthy) food, too many adult beverages, too much sun (ouch). In other words, we had a fabulously fun 4th of July.

CORN! Who doesn't love corn as July stretches into August? Here's a recipe that goes beyond corn on the cob: 1. Preheat oven to 450°. 2. Line a rimmed baking sheet with aluminum foil. Whisk together the lime juice, 2 teaspoons olive oil, ancho chile powder, paprika, and 1/4 teaspoon salt in a small bowl. Place the corn on the prepared baking sheet, and brush with the lime mixture.

Chilled avocado soup: A cooling recipe for a hot summer's day - After the Kids Leave

This is one of my personal favourites for summer: the creaminess of avocado, the tang of tomatoes and chili, with just a hint of spice. All chilled and ready to take you into a long summer's evening.
