Fresh Summer Recipes

I'm always on the lookout for easy, healthy summer recipes that make use of all the wonderful fresh foods available at this time of year.

Watermelon Salsa

Blueberry and Peach Salsa with Brie

This warm Brie with tangy blueberry salsa is a simple but delicious appetizer for cocktail parties, get-togethers and potlucks. Preheat oven to 350 degrees F. Line baking sheet with parchment paper. To make the salsa: combine blueberries, peaches, jalapeno, mint, lime juice, ginger, honey, and salt and pepper. Taste and adjust seasoning.
