A small monk residing in the temple decided to make the most of the high priest's absence and decided to cook the trotter. Unfortunately for him the high priest made an early return back to the temple, fearing he would be discovered he threw the cooked trotter into the stream. A woodman discovered the trotter the next day and pickled with salt, sugar and vinegar. He then cooked it and found that the meat was crisp and moist. This method of cooking soon spread across Guangzhou and is considered a delicacy. Cooking the trotter is quite complicated, it requires baking, boiling, soaking and marinating.
