Diabetic Friendly Mexican Recipes

Diabetes means that you have to be smarter about your eating choices, not that you have to give up all of your favorite foods. Eating healthy does not have to be bland and boring. By modifying recipes to be lower in carbs and fat, you can enjoy eating them without guilt. In honor of Cinco de Mayo, we have collected some healthy recipes inspired by traditional Mexican dishes for you to try. But be sure to work with your health care providers to include them in your meal plan appropriately.

Homemade Taco Seasoning + Low-Carb Taco Boats

In addition to craving Chinese food lately, tacos have also creeped their way up to the top of my must-eat list. Nothing sounds better right now than a straight up hot & crispy taco with tons of ice-cold toppings and infinite amounts of shredded cheddar cheese. RIGHT?! (No, I'm not pregnant!)

Shrimp and Avocado Ceviche for #HolidayFoodParty

Cinco de Mayo will be here soon. It's a fun celebration and the best part is the food and beverages. Mexican cuisine is so popular. I have it in my dinner rotation often (usually burritos, nachos, or tacos). There are more Mexican restaurants near my home than any other ethnic cuisine.

Tamales with Ancho Chile Sauce

I've had it in my mind for some time to come up with a recipe for healthy tamales. A Christmas tradition for many Mexican families and ours was no different. Tamales are traditionally made with corn or masa, mixed with lard, filled with pork or chicken, wrapped in corn husks and then steamed.
