The acid could cause tooth erosion, excess caffeine could cause high blood pressure or heartburn and over drinking it could cause risk of infection for compromised immune systems. Lactobacillus and Acetobacter are examples of the bacteria used in the process of fermentation. Lactobacillus is gram positive and non spore forming. It has been proven to prevent pathogenic bacterial infections in the body. It is found in milk and even the human gut. When oxygen is present, ethanol can be converted to acetic acid by acetic acid bacteria.
