Char for “stir-fried” and kway teow for “flat rice noodles” — Char kway teow is a stir-fried rice noodle dish that has its roots in Maritime Southeast Asia of southern China. Despite the vague theories about the origin of the dish, Char kway teow is an irreplaceable street food both in Malaysia and Singapore. The dish’s wide popularity has given rise to a multitude of regional varieties, but its primary ingredients, flat rice noodles, shrimps, eggs, cockles, bean sprouts, chives, and Chinese sausages, remain consistent across almost all variations.
