XMind is my default mind mapping application. It is very straight forward, easy working, using tabs that can be linked to each other and allows nice graphical representations.
MindManager has been the standard in mind mapping for a long time. It evolved from a pure mind mapping/brainstorming tool to an elaborated project management tool that visually connects ideas, information and people. I always liked the capability to export the mind map to a html-web. That was very helpful in publishing training materials starting from a mind map.
