Huni Roshi

This is the Maldivian version of flatbread, made with flour, lukewarm water, coconut, salt, and oil. Another traditional Maldivian dish, Keemiya is a savoury food item you can enjoy with your evening tea. All these ingredients are mashed into a mixture and made into flat circles and deep-fried until they turn a golden-brown colour.

Tuna Curry

This is a traditional curry served with rice, bread, or flatbread. To make the dish, chopped onions, curry leaves, cinnamon, and cardamom are sauteed in oil, and added to it are cubes of tuna fish. The last thing to go in is the mixture of coconut milk, and once that's added, the curry is simmered on low heat for a few minutes. This is a very simple recipe but absolutely delicious. Kukulku Riha

The Maldivian version of chicken curry, Kukulku Riha, is made with chicken, coconut milk, curry leaves, and an array of spices. Once the chicken has absorbed all the flavours, it's cooked on low heat in a base of coconut milk or water until it gives off a pleasant aroma. Maldivian Fish Curry

This is a recipe similar to chicken curry. Cubes of fish are cooked in a base of coconut milk and water, with loads of spices, pandan leaves, and coconut oil. Every Maldivian household enjoys Mas Huni for breakfast; this is one of the simplest recipes that there is. Gulha

This is a kind of fish soup you find in the Maldives. Tuna is the fish used in the soup, and the condiments include pandan leaves, fresh chilli peppers, and onions.
