Harees

Another classic dish is Al Harees, which has a similar consistency to porridge. Whole wheat is first crushed and boiled with salt before adding to the meat. The mixture is then simmered for a long time, after which the pot gets placed in a hole filled with burning coals, for even more cooking. The pot is taken out of the cavity several times to give it a good mix! A dish of home-made harees is the most authentic and is usually had with a generous serving of ghee on the side. This tasty ball of dough is a widespread delicacy all across the Arabic world, and among the dishes used at Iftar, the period of breaking fast, during Ramadan. The dough balls are made of flour, sugar and yeast and fermented before frying in oil.
