Banbukeylu Harisa – Maldivian Breadfruit Curry

Breadfruit is another Maldivian favourite. The curry version of this fruit is rich in coconut milk. It has an aroma that is just as appealing as its soothing yellow colour. This curry also boasts a slight lemony tinge and goes perfectly well with rice, roti and even bread.

Mashuni

Mashuni is prepared using smoked tuna that is combined with local coconut flakes. A breakfast favourite in the Maldives, this is a must-have. Alternatively, Mashuni can be prepared like a sandwich by placing the filling inside the wrap prior to baking it.

Roshi

Roshi is the Maldivian roti. Prepared using a combination of nearly boiling water and dough, the resulting Roshi is softer than any tortilla you would have ever tasted. A staple in any Maldives restaurant, whether it is the more luxurious OZEN LIFE MAADHOO, or the little cozy eateries in the main town, Roshi is something you are sure to encounter.

Boshi Mashuni

Maldivians have a unique way of creating salads and the Boshi Mashuni is proof of this fact. The best part is that every ingredient used in this dish makes it super healthy. The salad is prepared by combining fresh coconut, banana flowers, spices, and coriander leaves. It perfectly complements steamed rice and has a tangy flavour.

Mas Riha

The Maldivian fish curry is a staple in every household. The Mas Riha is prepared using either yellowfin tuna or skip jack, combined with ginger, garlic, onion, curry leaves, cardamom, and chilli slices after which thick coconut milk is added. The heat is then reduced, and the chunks of marinated fish are added. Now all you need to do is cook it for a few minutes and your Mas Riha is ready.

Theluli Mas

Theluli Mas is a dish that only consists of fried fish; however, it is loved by many as it is one of the most delicious seafood treats in all of Maldives. Making this dish is not that difficult. Just get your hands on some tuna steaks, mix, and marinate them with adequate tomato paste and curry powder, and deep fry them in coconut oil. No matter how many times you have it, this dish never gets old.

Fihuni Mas

Fihuni Mas is considered the healthier version of Theluli Mas as the fish is baked instead of deep frying. The whole fish is used to prepare the Fihuni Mas. Cumin and curry leaves are added to the marinade chilli.
