The largest of the East African countries, Tanzania is famous for Mount Kilimanjaro, Serengeti National Park and Zanzibar Islands of beautiful beaches and heavenly spices. It is no wonder that visitors are eager to discover more interesting facts about this nation, especially their food culture.

Aromatic Mchuzi wa Samaki

This Swahili dish is typical of Tanzanian food culture, simple and full of flavour. White fish such as sea bass, red snapper or cod is used to cook this using garlic, onion, oil, tomatoes and curry powder. Once cooked well and simmered extracting the rich flavours of fish and ingredients a dash of lemon juice and a sprinkling of chopped coriander complete this aromatic dish eaten with steamed white rice.

Famed street food Chipsi Mayai

This finger-licking good dish of French fries and eggs is made in a wok with bubbling oil. A combination of the two power ingredients makes it somewhat like a heavy omelette. Variations to the dish are made by creative chefs using colourful bell peppers and onions to add a bit of crunch, flavour and presentation. Served with kachumbari sauce made of tomatoes, chilli peppers and onions this staple fills you up and is loved by all. A fast-selling dish at many of the best restaurants in Zanzibar.

Zanzibar Pizza

The name conjures up a vision of Italian Pizza with mouthwatering toppings and a yummy smell. However, the Zanzibar version of pizza is a thinner dough which is not left to rise as is done with Italian pizza dough but topped with a savoury or sweet filling. The sides are then rolled up to make a covered pancake and fried till golden. The fast-moving savoury fillings are meat, seafood, chopped vegetables, cheese, mayonnaise and eggs whilst the sweet fillings can be chopped mangoes, bananas combined with chocolate spread and peanut butter. These are relished often as snacks by guests at hotels such as The Residence Zanzibar.

Succulent Mshikaki

This excellent preparation of marinated beef, goat or mutton on skewers cooked slow and well over hot coals is a firm favourite amongst locals and visitors, especially as an evening meal. The spices and herbs are chosen well and in the right quantities to sharpen the flavours but not overpower the meat as it gets tenderized and cooked gradually to perfection. Accompaniments to this meat dish are sauces or a dip. Make sure you place the order for the right quantity as the waiting can be too long if you want more.

Mchicha the vegetarian's delight

Using leafy vegetables such as spinach and local greens, grated coconut, diced tomatoes and onions are used to cook it gently using coconut milk and a dash of peanut butter. The thick and creamy dish of goodness can be eaten with steamed rice, or ugali which is made with Maize flour and water cooked slowly until it becomes a dough and sets making it good to be eaten with an accompaniment. A satisfying meal at lunch or dinner time.
