Maldivian food is fresh, wholesome, and influenced by its neighbours Sri Lanka and India. You will find breakfast specials such as garudiya, a nourishing fish soup, roshi a type of roti that's eaten with curries and fish salad, and of course, the lovely curries and vegetable dishes eaten with rice. Head into the capital Male on a day excursion and you can stop at the tea shops for local finger food or short-eats known as hedika. Some of the favourites are samosa-like rolls filled with boiled egg and sautéed cabbage, Gulha, which is fish-filled balls of dough, keemia batter-fried fish rolls, and kuli boakiba, which is a lovely fish cake with a spicy kick. Of course, you can't give the desserts a miss, especially when there is so much to savour.
