Fish Curry

Gulha

Being a rather unique and eccentric dish, Gulha is made of wheat flour or rice flour dough which is filled with a mixture of cooked tuna, onions, chillies and shredded coconut. The stuffed dough is then fried in coconut oil till it develops a golden brown exterior. Once thoroughly cooked what you get is a perfectly fried snack that has crunchy outside and soft-flavourful inside.

Mas Huni

Being a staple side dish that is usually served during breakfast, Mas Huni is made from shredded tuna that is cooked or smoked. The shredded fish is then mixed with onions, chillies and shredded coconut. This simple yet extremely decadent side dish is commonly enjoyed with a Maldivian flatbread called Roshi and at times with boiled yams as well.

Bis Keemiya

Maldivians thoroughly love fried food and bis keemiya is one of the dishes that will prove this fact true. This deep-fried delicacy is made from a variety of pastry dough that is filled with a sauteed mixture of tuna, hard-boiled eggs, shredded cabbage, onions, curry leaves and chillies. This dish is also called a Maldivian samosa and it is commonly enjoyed with an assortment of sauces during tea time.

Kulhi Boakibaa

Like other Maldivian food items, this staple dish is also made with fish as the main ingredient, but it boasts an entirely new and delicious texture than that of others for it is a type of fish cake. It is made with smoked tuna, ground rice, ginger, garlic, chopped onions, scraped coconut and chillies. The mixture is then placed on a tray and is baked to perfection. Unlike other Maldivian delicacies that are deep-fried heavy, this dish is delightfully nutritious and could be quite filling too. Kulhi Boakibaa is mostly made during special occasions at households and it could only be found at a few local restaurants.

Saagu Bondibai

If you are a vegan, this is a must-try delicacy in the Maldives! It is a pudding-like dessert that is made from saagu seeds, sugar and coconut milk. Some locals also add rose water and a little bit of cardamom for fragrance. There is also a vegetarian version of this dish where condensed milk is also added to give it a more refined and creamy consistency.
