We have revamped our website

We have revamped our website

Hi! We have revamped our website at Marketfresh.com.sg. From today onwards, visitors to Marketfresh.com.sg will be greeted with a fresh look.

The update is not merely aesthetic though. We have aligned our website to our new strategy of being more content centric rather than product centric. Previously, a lot of the content we put out are concentrated on Facebook and Youtube. There are links that take users from our website to Facebook. With this update, most of the content we put out (except the Facebook Live sessions) can be consumed directly on our website.

The reason for the pivot is due to us being clearer with our vision. Covid has taught us that chasing revenue is secondary to maximizing efficiency if we want to produce profits. We do not have the financial backing of Lazada or Shopee. Our condition for survival is profit, not user growth. As such, we have identified that we only need around 27 orders a day to break even. We are averaging around 10 orders a day now. The plan is to try to get the number to 27 and maintain it.

The strategy to be more content centric is also to build a brand identity for Marketfresh.com.sg. The barrier to entry for online groceries is very low. Hundreds of new online grocery stores sprouted out in Singapore during the circuit breaker period. Online platforms like Shopify, Facebook and Shopee have made it so easy for individuals to start their own businesses. Anyone can take a few pictures, upload them and they are in business. It is a great boom for anyone living in this period, but also a challenge if we want to stand out.

We are still refining what the best content should be. This is very much an exploratory period for us. We have been consistently doing cooking videos and live sessions on Facebook. Even this exact post that I am writing right now is part of our push for content and engagement. Hopefully, with our new web UI and consistent content, MarkFresh can slowly build an identity for itself.

Please do let us know what you would like to see. Please let us know your thoughts. Any critique is extremely welcome.

Your Sincerely

Pan

Ever wondered why the Chinese Pomfret is expensive?

Ever wondered why the Chinese Pomfret is expensive?

The Chinese Pomfret is a very popular food fish among the Chinese in Singapore. Like the red grouper, it is a prized seafood that commands a premium in the market, and its pictures also adorn many a restaurant signboards. Prices for Chinese pomfrets can be even higher than red groupers during certain periods of time. What makes the Chinese pomfret one of the most sought after and expensive seafood in Singapore?

The Chinese pomfret has a very distinctive shape and taste. It has a unique umami taste that cannot be found in other fishes. The taste is hard to describe. You do have to try it to understand it. The flesh of the Chinese pomfret is very soft, but it does not disintegrate when cooked in soup.

There are a few types of pomfret, namely Chinese pomfret, White pomfret, Black pomfret and Silver Pomfret. The Chinese pomfret is often confused with White pomfrets due to their similar shapes. The Chinese pomfret is flatter and more circular, while the white pomfret is thicker and more angular in shape.

Chinese pomfrets are mainly used in Chinese, particularly Teochew cuisines. It is most commonly used for steaming, porridges, and soup. We do use Chinese pomfrets for frying sometimes when they are very small sized. In this case, they are fried to a crispy brown and parts like the fins and bones are consumed. Chinese pomfrets are especially tasty when steamed ‘Teochew style’.

Teochew style steaming entails using salted vegetables and sour plums over traditional seasonings like salt or soy sauce. The sourness of Teochew steaming enhances the unique umami taste of Chinese pomfret. This perfect combination makes Teochew Steamed Chinese Pomfrets a very popular mainstay that is found in almost every Chinese restaurant and Zi Char stall in Singapore.

The Chinese pomfret is one of the most expensive seafood we can find in the market due to the high demand and low supply. Usually, the bigger the Chinese pomfret the tastier it is, but the price is also higher. It is common for good sized Chinese pomfrets that are at least over a kilogram each to break the SGD$100/kg mark during Chinese New Year. Otherwise, it is still not cheap, hovering at around $30-$50 during non-peak periods.

Chinese pomfrets contain very good nutritional value. The cholesteryl level is a little higher compared to other fishes, but relatively speaking, one Chinese pomfret contains lower cholesteryl than a single egg.

More and more people are discovering and loving the taste of the Chinese pomfret. It is even starting to make its way into fine dining. There are a growing number of foreign born chefs experimenting and incorporating Chinese pomfrets into their fine dining menu. Hopefully, in time, we can discover even more ways to prepare and enjoy this amazing seafood.
