I adapted the recipe of Moroccan vegetable pasta soup from Betty Crocker and has tried it twice since.The little one is learning to speak and while giving her the soup(I kept a portion without paprika) I told her that it’s a soup. The next day when she came into the kitchen, she asked “mamma soup”.While feeding her something is a big task,I know what I can make for her often which is healthy too.
My husband is now very happy for my decision to buy the slow cooker and indulging all these soups.He even asked to make one disoup daily for a balanced and healthy diet.
This brown lentil soup is cooked for 8 hours and the best part is you literally have to do nothing.Just dump in all the ingredients in slow cooker and the rest will be done with it.The recipe is adapted from here and being low fat and a good source of protein and fiber, it is a perfect diabetic friendly meal.The soup can be made ahead and stored to be used in 2-3 days.
Ingredients:
250 gm Bitter gourd/Karela , thinly sliced
2 onions , finely copped
1 raw mango , grated
3 -4 green chillies , chopped
1 teaspoon fenugreek seeds
1 teaspoon fennel seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chilly powder
1/2 teaspoon garam masala powder
Salt to taste
2 tablespoon olive oil
I found this recipe on Tarla Dalal’s site and made it , my father in law liked these steaming hot idlis very much . This is a wonderful recipe replacing rice with healthy moong beans and added with vegetables also. So let’s start the recipe . Yum
