Spiced Poha curd rice ( quick snack )

Curd poha or mosaru avalakki in Karnataka is relished as quick snack. It's typically made with dairy curd. This recipe uses a plant-based peanut curd instead. This is also an oil-free version making it a healthier option. Typically people use white poha while this recipe uses red rice poha. it's also used as a Prasad and offered to Lord Krishna during Krishna Janmashtami to celebrate the friendship of Krishna and Sudhama.

Vegetable pulav - Raw & oil free

This is the delicious recipe of raw vegetable Palav. It is absolutely free of oil or any processed ingredients.

Tomato Celery Juice With Mint & Ginger

Juices are a great way to up your raw quotient. They act as our much needed natural vitamin and mineral supplement. But it may feel cumbersome to get the process of juicing going. When starting to incorporate juices in your daily rhythm, it's best to start with simple single ingredients. Here is a quick-to-do recipe of readily available tomato juice blended with the flavourful pudina and ginger. Do note, we do not add any salt to our veggie juice as salt makes it fester in the tummy!

Actual prep time of this dessert is about 30-45 mins. The freezing will take 2-3 hours. The preparation of this recipe is easy, if you have extracted your coconut milk in advance. Many times, home made ice creams leave a granular texture and are not as smooth. The trick is to churn them in mixie once again after it has frozen. And freeze once more. Also, you will need to consume it quickly. The longer you keep in fridge the more icy it will become. Wellcure tip: Break this recipe over 2 days Day1: extract coconut milk and set in fridge (it lasts for good 2-3 days) Day 2: extract almond milk and make the icecream

Pumpkin Kootu (Pumpkin cooked in simple coconut gravy) - Dairy-Free! Oil-Free!

Kootu is a Tamil word means "add" i.e. vegetable added with lentils which form the dish, made of vegetable and lentils and are semi-solid in consistency. Usually a combination of vegetables with lentils and a coconut paste, it forms a part of everyday cooking. This pumpkin kootu is made without lentils but with a generous amount of ground coconut. The natural sweetness of the vegetables is countered with the sharpness of green chillies. Makes a wholesome meal with steamed rice or millets.

Soaked Poha Sweet Drink– Probiotic!

Poha is Flattened rice, which is rice flattened into light, dry flakes. Rice is parboiled before flattening so that it can be consumed with very little to no cooking. This may come as a surprise to many, but poha is good probiotic food too. This is because the dish is made by parboiling paddy and then drying it out in the sun for a few hours. After this, the dried product is beaten flat to make poha. The finished product has undergone fermentation and hence retains the microbial flora from the partially digested carbs and proteins, which is healthy for the gut. In North Karnataka, poha is used to make a health drink to soothe stomach ailments, as explained by the chef at the homestay when we visited Gokarna. Do try this recipe for a quick breakfast idea.

Gluten-free instant masala rice rawa idly

This is an instant masala idly made with rice rawa and hence this is also gluten-free. The masala for the idly is also made oil-free in this recipe. Usually, rawa idly is made with wheat or sooji rawa and uses dairy curd. This is my mother's recipe and since I learnt this few yrs back, I have not bought MTR or any instant mix. I have used a plant-based curd made with peanuts.

Aam Panna (raw Mango Drink) - Drink It Sugar Free

Here's a quick recipe of our own traditional mango drink - the aam panna. This is a cooling mango drink slightly sweet and sour to taste. A healthier option to beat the heat without any preservatives or sugar. We can tell you from experience at home, it is as much loved by the kids as much by adults. We have replaced the sugar with Jaggery or Dates paste to ensure its refined sugar free!
