My favourite Indian dish is Dhal. Its healthy, nourishing and perfect on a winter's day.

Growing up, Pasta e fagioli, meaning "pasta and beans" was one of my all time favourites.
As we well and truly settle into winter, we tend to crave comforting meals that feel like a warm hug. And this one does it for me everytime.
It may not be the prettiest of dish but it makes up for it in flavour, especially served with a crusty slice of bread or two π
Like many other Italian favourites, this soup started as a peasent dish as it was made of inexpensive ingredients.

Whilst I love to create dishes from all around the world, Italian cooking is really at the core of my being.
I love the simplicity of Italian cuisine, the smell, and most of all I love the memories it invokes from my childhood.
Spaghetti al Pomodoro is my go to. Fresh tomato, basil and salt and a really good quality olive oil π never disappoints.

It's one my favourite, classic Indian dishes - Chole Masala.
In this recipe, which has been passed down from my beautiful mother-in-law, chickpeas are mixed with onion, garlic, ginger and tomatoes with a special blend of spices.

It goes without saying that I have a huge sweet tooth, but not the white, sugary type.
I much prefer to create vegan sweets with real ingredients and un-refined sugars.
This mixed berry, raw vegan cheesecake is next level. Using the incredible @plantlifefoodco peanut crunch granola, the base is rich, full of flavour and with a few dates thrown in, is the perfect, chewy sweet base. And perfect for those that are gluten-free.
Topped, with a delicate berry like mousse, sweetened with maple syrup, this really is a match made in heaven.

1/4 cup brazil nuts
5 tablespoons nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon salt

This would have to be hands-down one of my favourite, creative recipes.
Swapping out pasta sheets for zucchini ribbons for the ravioli and using a combination of cashews, firm tofu, nutritional yeast and spinach to make a vegan ricotta, spinach filling.
Four zucchini ribbons will make one ravioli. Place them in a tray with tomato pasta sauce, top with more sauce and vegan parmesan cheese and oven bake for 25 minutes.
This dish is featured at the upcoming Italian masterclass on 23rd October. Three spots left. Class held on a Friday π What a great way to start the weekend.

This weekend I welcomed 12 exceptional women to the stunning Maple Grove Retreat for a weekend, plant-based cooking retreat.
There is something truly special and grounding about women coming together.
We arrived strangers and left with new friends, full hearts, and a greater respect for ourselves and women.
I feel incredibly blessed to have led this retreat and am absolutely so looking forward to many more to come.

This vege lasagna is something I've been working on for some time. And I'm happy to say I've finally nailed it. It had its first official test run at last week's Plant-based Christmas class and it was a unanimous HELL YES π
I wanted to find a way to use mostly whole-food ingredients and the cheese was the hardest part to replicate. Using vegetables and nutritional yeast I created a creamy cheese-like alternative that doubles up as a bechamel too. So creamy and full of flavour.
It's a perfect Christmas dish as you can prep ahead of time and simply pop in the oven whilst you enjoy your Christmas beverage πΎ

I grew up with this dish a regular event in our family home.
The tomatoes are filled with a garlic and basil arborio rice, oven baked and served with roast potatoes.

This chick pea and tofu curry is loaded with Indian spices. A few of your classic spices like turmeric, cumin and corriander but this time, I added amchur, a dried mango powder. It added a great stringent bite to the curry.
Served with basmati rice and I'm done for the day!

This summer salad consists of rocket, cucumber, thinly sliced green apple, pomegranate and a class balsamic olive oil dressing.

Marinated in a batter made from chickpea flour, plant-based milk and a mix of spices such as paprika, corriander and more, then rolled in a gluten free panko crumb.
I baked this batch to create a healthy version, but I must say frying would definitely have been way tastier, but a tad naughty π

This is how I love to eat - tonnes of salads, fresh food, plant-based protein and loads of crunch.
But for now I'll just be dreaming of this feast as I embark on a deep gut cleanse.
I'll be on a water fast and broth for 3 - 4 days followed by two weeks of vegetable soups and then easing back into a bigger variety of foods with salads, legumes and more.
Can't say it will be easy, especially with the constant flow of recipes and cooking classes I'll be punching out, but I'm determined to cleanse and move my body to peak health.

This cauli mash is to die for - a simple combination of cauliflower, garlic, salt, almond milk and nutritional yeast.
Looks like dreamy, fluffy potato.
Pair it with some legs, vege meatballs or just devour a whole bowl on its own π
After making home-made foccacia, my family have told me we don't need to buy bread ever again π€£
I whipped up three of these today. We are about to embark on a motorhome road trip π, so figured lots of foccacia was a good idea.
