Kesari Bath: **
A popular South Indian sweet dish made from semolina is mainly prepared for breakfast or during festival feast. It is known with several other names like Sooji Kesari, Sooji Halwa, Sheera or Semolina Kesari. Kesari Bhat has become the staple food with the working class who loves to have this in their tiffin.

Ingredients

  • ½ cup Golden Bansi Kesari Rawa/Sooji
  • 5-6 table spoon ghee
  • 1 ½ cup sugar
  • 2 cups milk
  • A little saffaron (Kesar)
  • Few cashew nuts and ½ table spoon of green cardamom powder

Directions **
Heat the ghee in a khadai and roast Golden Bansi Kesari Rava till it turns light brown.
Add milk, sugar and saffron. Cook over medium heat, keep stirring till the sugar dissolves and the mixture attains a halwa consistency. Add the cardamom powder and mix it well.
Remove from heat and decorate Golden Bansi Kesari Halwa with cashew nuts and serve it hot.

Kesar Upma:
Uppumavu, Upma or uppittu is a dish from the Indian subcontinent, most common in South Indian, Maharashtrian, and Sri Lankan Tamil breakfast. It is usually made with semolina (called rava or suji in India). Cooked as a thick porridge from dry roasted semolina, various seasonings or vegetables are often added during the cooking, depending on individual preferences.

Ingredients

  • ½ cup golden bansi rava/ sooji
  • 1 table spoon ghee/ oil
  • ¼ spoon mustard
  • 1 table spoon chana dal
  • 1 table spoon urad dal
  • 5-8 cashews halved and cleaned
  • 1 spring curry leaves
  • 1 onion chopped small
  • 1 green chilly slit
  • ½ table spoon ginger very fine chopped
  • 2 cup water
  • Lemon juice
  • Little chopped fresh green coriander ** Directions**
  • Take a pan add oil/ghee, add urad dal, chana dal, mustard, cashews. Fry until it turn golden. Add onions, ginger, curry leaves and green chilly. Stir and sauté for 2 mins. Add Golden Bansi Rawa and roast it for 1-2 minutes.
  • Pour lukewarm water and salt as per taste.
  • Bring the water to boil and stir the Golden Bansi Rawa in the water, to avoid lumps.
  • Cover and cook on a low flame until the water evaporates. This might take 3-4 minutes.
  • Add lemon juice and mix well. Sprinkle coriander and serve hot.

Broken Wheat Daliya/Upma:
It is popular in North India and is made with whole wheat grits or broken wheat. It can be made either as a sweet dalia kheer or as savoury daliya. Daliya is a one-pot meal loaded with fiber, high in nutrition and low in calories. A perfect choice for all those, who is looking for a healthy breakfast.

Ingredients**

  • 1 ½ cup broken wheat/dalia
  • 4 ½ cup water
  • 1 chopped onion
  • ¼ cup green peas
  • 1 large chopped carrot
  • 1 potato peeled and cut in small piece
  • 1-2 green chillies (as per taste)
  • 5-7 curry leaves
  • ½ tablespoon mustard
  • ½ tablespoon cumin
  • Pinch of hing
  • Salt to taste
  • 3 tablespoon oil

Directions

  • Roast Broken Wheat/Daliya till it gets light brown. Heat oil in a pan, add mustard, hing, cumin and curry leaves.
  • After the spices splutter, add onions, carrots, peas, potatoes and fry for 3-4 mins. Add warm water and salt and bring the water to a rapid boil. Add broken wheat slowly, mix it well and close the pan lid.
  • Cook till the vegetables are fully cooked on low fame. Once cooked serve with your favourite sides chutney or pickle or sambar.
