Babi Guling

This is suckling pig that is a delicious dish in Bali. Even though pork is rare to find in Indonesia, this dish is definitely worth the search. Babi Guling is made of suckling pig who had only mothers' milk. Then the pig is lathered with a spice paste and stuffed with more spices like lemongrass, ginger, shallots, garlic and many more. The meat is then cooked with a wood burner or using coconut husk to ensure the tender texture of the meat. The dish is served with fried pig intestines, caramelized crackling, and satay.

Lawar

This is a mix of deep fried vegetables, meat and grated coconut along with many kinds of spices and herbs. Some villages in Bali uses fresh blood in this dish as well. The recipe of this dish changes from village to village. Lawar is usually served with Babi Guling but it is an individual dish at the same time. You might think adding blood is gross, but it perfectly complements the other ingredients used in the dish. There is lawar made with jackfruit and nangka as well.

Bebek Betutu

This is a dish that's the main ingredient is a slow-cooked duck. This is a dish made at ceremonies and other special occasions. The dish cannot be tasted just as you enter into the restaurant but, you have to order the duck the previous day. This makes sure that the duck is cooked in the perfect temperature until it has the texture that is expected. The duck is first lathered with turmeric and other powdered spices. Just like with the suckling pig, the duck is stuffed with eggs, spices, shallots and more ingredients. The meat should be cooked until the bone can be removed from the meat easily. Most people use chicken instead of duck for this dish.

Sate Lembat

This is the Indonesian version of kebab. Only, unlike with kebabs, the meat used is grounded using a pestle and shredded coconut along with spices are added. The meat is made into bite-sized pieces and fixed into a skewer. The kebabs are cooked over hot coals for a while. The usual peanut sauce is replaced with shrimp sambal called matah. This is a very popular street food that is loved by locals and tourists alike. Most restaurants in Seminyak and Bali too have their own rendition of this dish. Ikan bakar

This is not an authentic Balinese dish but is just as good as one. This is a kind of grilled fish with chilli sauce that gives the dish its edge. It is not extremely spicy as there are other ingredients such as tomatoes to add more flavour. Ikan Bakar is usually cooked on the beach. Tasting this dish is a unique experience itself.
