Sri Lanka is a beautiful tropical island known for the sunny beaches, the historical locations, and their divine food and if you are going to the south, here is a list of must-try food.

Kiribath – Milk Rice

This is one of the most loved foods in Sri Lanka and it is freely available. Made with white rice or red rice mixed with coconut milk, the dish is usually eaten with an accompaniment known as 'Lunu Miris' or 'Seeni Sambol' which are two different types of preparations of onions and other complimenting ingredients. Different areas of the island have different ways of preparing the dish and it acquires a unique taste depending on the location. Fish Ambul Thiyal – Sour Fish Curry

If you love a tangy taste in your food then you will undoubtedly fall in love with the Fish Ambul Thiyal which is a unique fish preparation. It is prepared with fish cut into cubes and then mixed with different spices and dried Goraka, which is the most important ingredient as it is what adds the sour taste to the curry. It is said that the most delicious Ambul Thiyal is made towards the south of the island, in Kalutara. Restaurants serve this preparation in their rice and curry buffets and it is a delightful dish to have as an accompaniment for rice.

Rice and Curry

Rice and curry is the staple diet for most Sri Lankans and the locals absolutely love their rice and curry. The combinations of the curries are the secret to a delicious meal of Rice and Curry and most locals are able to mix and match a healthy divine meal with wet and dry vegetables and meat preparations. With the red or white rice, different curries are served and you are able to mix it with the rice as you eat. Papadam which is a deep fried, thin, circular shaped, crispy wafer is also served with rice and curry at most restaurants.

Aappa – Hoppers

Aappa is a type of crepe but has a spicier taste and comes in two forms, plain hoppers, and egg hoppers. Egg hoppers are where the plain hopper is topped with a sunny side egg in the centre. It is generally eaten with a curry making it a wholesome and healthy meal. It is made with fermented rice flour along with coconut milk and you get a gooey and thick centre with a thin and crispy edge. You can see the hoppers being prepared at the breakfast buffets at most restaurants.

Indi Aappa -String Hoppers

Even though they have quite similar names the Indi Aappa is completely different to the Hoppers. The dish is made with rice flour and then formed through a utensil which squeezes out the paste into long thin shaped strips like noodles. These are then steamed in order to make the String Hoppers. String Hoppers are generally eaten with a range of curries and a meat of your choice or eggs. One of the most common factors with Indi Aappa is that you will always have a curry with a lot of gravy and a few other dry curries to accompany your main dish.
