Desiccated Coconut

Desiccated coconut is produced from fresh matured coconuts and is available in different cuts depending on how it is processed. Desiccated coconut is the shredded white meat of the coconut from which the moisture is extracted. It is available either as Macaroon or Fine, Medium, Fancy Shred, Flakes, and Chips. It is also available either as Toasted, Sweetened or as Toasted Sweetened.

Desiccated coconut in all forms is suitable for both sweet and savory dishes but is used mainly in cakes, biscuits, and a chocolate filling. The longer strands like the Fancy Shred or the Flakes are usually used for garnishing and decorating.

It is produced from newly harvested coconuts and brought to the factory within 48 hours. The coconut is de-shelled, the brown testa of the meat is removed, then granulated into fine granules, then pasteurized, and passed through a mechanical continuous belt dryer to reduce the moisture of the coconut meat at a controlled temperature and then passes through a series magnets and metal detectors and packed. All our products are analyzed in composite samples of every 10 bags for physical and microbiological analysis before it is approved for shipment.
