If you are from Sri Lanka you would have surely heard of the devilled chicken. A favourite accompaniment to fried rice, devilled chicken actually originates from China. But this has become so infused into the Sri Lankan culture that many have actually mistaken this to be a local favourite. Devilled chicken is prepared by lightly frying cubes of marinated chicken. This is then once again stir fried with tempered onions, ginger, garlic, tomatoes and green chillies. What gives this dish its authentic Chinese flavour is the tomato sauce and the soya sauce that is added in the end.
