These make cooking baguettes a snap! Secret tip * set your baguettes out to rise on a piece of parchment paper in a clouche (stiff material that will help your bread retain its shape. Then after the pans are all hot in the oven place your baguettes and parchment paper directly onto the pan. Put a roasting pan under the the bread, let it get super hot during the warm up phase and then just before you close the door with your bread in there put a cup or so of water into the hot pan for steam. About half way through the cooking cycle remove the parchment paper so the bottom of your bread crisp up.
