Hot Mulled Cider

traditional New England favorite

Serves 8

Ingredients

  • 1/2 cup brown sugar
  • 2 quarts apple cider
  • 1 teaspoon whole allspice
  • 1/2 teaspoon whole cloves
  • 3 cinnamon sticks
  • 2 large oranges (cut into quarters)

Directions

  1. Mix ingredients together in Crockpot and turn on low.
  2. Allow to warm for 3-4 hours.
  3. Use ladle to serve when ready.

Citrus Spiced Cider

a welcoming refreshment for guests

Serves 16

Ingredients

  • 1 gal apple cider
  • 1 cup orange juice
  • 1/2 tsp pure orange extract
  • 1/2 tsp pure lemon extract
  • 2 tsp whole cloves
  • 4 cinnamon sticks
  • 1 tsp whole allspice

Directions

  1. Mix all ingredients in a 6 to 8 quart saucepot.
  2. Cook over low heat 30 minutes or until hot.
  3. Remove whole spices before serving.
  4. Serve warm, or refrigerate to serve cold.

Apricot Apple Cider

perfect for fall events

Serves 8

Ingredients

  • 1 quart apricot nectar
  • 1 quart apple cider
  • 4 sticks cinnamon
  • 1/2 teaspoon whole cloves

Directions

  1. Combine ingredients in a 3 or 4 quart pan.
  2. Cover, and heat to boiling.
  3. Once boiled, reduce heat and simmer for 20 minutes to steep the spices.
  4. Serve hot.

Notes

Can also prepare in and serve from slow cooker.
Place cloves in tea infuser for easy removal.

Cinnamon Apple Sparkler

a change from the ordinary

Serves 10

Ingredients

  • 2 black tea bags
  • 2 3" cinnamon sticks
  • 1 bottle sparkling apple cider (25.4 oz)
  • 1 ounce fresh juice from about 2 lemons

Directions

  1. Steep tea bags and cinnamon sticks in 16 oz. boiling water for 10-20 minutes.
  2. Remove tea bags and cinnamon sticks and chill in the refrigerator.
  3. Combine sparkling cider, tea, and lemon juice In a large pitcher.
  4. Stir gently, and serve immediately with ice.

Notes

Additional cinnamon sticks can be used as garnish if desired.

Golden Autumn Punch

Serves 16

Ingredients

  • 6 cups of water
  • 4 1/2 cups of sugar
  • 2 packets of gelatin (any flavor with orange coloring)
  • 16 ounces of pineapple juice.

Directions

  1. Pour all of the ingredients into a punch bowl and stir.
  2. Do not refrigerate or freeze as this will cause the gelatin to set.

Notes

Add vanilla or almond extract for a spicier flavor.
Experiment with orange Kool-Aid or orange food coloring instead of gelatin.

Quick Eggless Eggnog

Serves 4

Ingredients

  • 4 cups of regular milk or soy milk
  • 1 cup of heavy cream
  • 2 tablespoons of sugar or sugar substitute
  • A shaker of nutmeg

Directions

  1. Fill the blender three quarters of the way with cubed ice.
  2. In the blender, combine all of the above ingredients, besides the nutmeg..
  3. Turn the blender on high or on the puree setting.
  4. Pour the drink into glasses and top each with a pinch of nutmeg.

Ginger Pear Punch

Serves 12

Ingredients
For Ginger Syrup:

  • 1 3-inch piece fresh ginger, peeled and cut into thirds
  • 2 cups water
  • 1 cup sugar

For Punch:

  • 8 cups chilled pear juice
  • 1 cup ginger syrup
  • 1/4 cup plus 1 tablespoon lemon juice
  • 1 1/2 teaspoons ground ginger
  • 3 1/2 cups seltzer
  • large ice block
  • candied ginger, for garnish

Directions

  1. Make Ginger Syrup: Place ginger, water, and sugar in a medium saucepan. Bring mixture to a boil then reduce heat and simmer until reduced to a syrup, about 30 minutes. Let cool.
  2. Make Punch: In a large punch bowl, combine pear juice, ginger syrup, lemon juice, and ground ginger. Whisk until combined.
  3. Add seltzer and stir gently to combine. Add ice block to punch bowl.
  4. If desired, place three pieces of candied ginger on a tooth pick and place in each cocktail glass as garnish.
