Here is a list of the recipes I used from Memorial Day dinner.

Aida's Corn, Tomato and Avocado Salad

Classic Ceviche Recipe

[julie's note] I omitted the olives and served with Club Crackers. I also added Mexican Oregano. (mom says that's the secret ingredient.)
This classic ceviche recipe is the perfect party appetizer. Chef Rick Bayless combines fish with lime and spicy chiles, then piles the mixture on tortilla chips.

Spring Pizzas

I used caramelized regular onions and toasted french bread.

Brush a baking sheet with olive oil. Stretch the dough into four 6-inch rounds; place on the baking sheet and bake until golden, about 12 minutes.
